Go to the bash via the Southernmost and Westernmost points of the country, and then come back to Durban via the Northernmost and Easternmost points.
A week to the bash, a week to Mussina and a week home - 350km per day. Stay at B&Bs and backpackers along the way.
Will have to start trimming down and gymming now.

Well, I started to look at distances last night.
I sliced a track to Alexander Bay into 6 equal bits - works out about 425 Km per day - Leave Durban the Sat before the bash.
Closest dorpies to the cut points are :-
sat Umtata
sun Kenton on sea
Mon Herold's bay
Tue -> Agulhas (S30 50') -> Worcester
Wed Bitterfontein ?
Thu Alexander bay (E16 28')
Fri to bash at leisure 260Km
I think I may skip Cape Town and ride through the Boland from Agulhas to Worcester - Not 'cos I don't like CT, but I have always just N1'd in and out, and have never dawdled in the Boland and never seen the Cedarberg and that part of the country - time to fix that.
My rough thinking is to try to just slab it in the mornings, unpack, and take the afternoons off to look about a bit.
