Riding dirt with a pillion

Hey guys, how about you share your tips and experience, and techniques, on pillion off-road riding here. on dirt highways i usually sit with the_wife on the back, but what if it gets tricky. should she stand with me? should she stay seated? should she shift her weight with mine? what about sand? if she stands, how should she hold on? etc etc

any tips or experience will be appreciated!!
