1150 running hot and low on power

My pig tends to run hot whenever I do technical riding. Temp goes up to just under the red section.
When cruising temp is 1 bar above the middle.

She also wont go faster than about 165kph. (My old '99 model 1150 reached 190 relatively easy)

Any advice on where to start looking??!
