Advice, please: Soft Luggage

OK, so many of you saw my earlier questions regarding an alternative solution for alu panniers on my GSA.  Eventually through the help of Vark I found the long term solution: Leather saddle bags.  The only problem is that the guy who makes it is in Cape Town so I put the issue on hold for now.  For now I'm fine for solo trips with the combination of my top box and pillion bag, but as soon as there is a pillion I have a space problem.

The weekend after next me and the missus are going to Golden Gate for the weekend and I'm looking for an inexpensive solution in terms of soft panniers / saddle bags that can be strapped to the GSA's pannier brackets.  Any advice?
