Finally got around to installing a 12v socket in order to get a workable (let's hope) GPS solution.
I spliced into the dash light for power, should be fine as it will only be powering the phone. I got a BikeGear universal GPS bag that looks to be pretty dust proof. Just need to get some sponge to make the phone fit snug (the ones that came with the bag is a bit hard).
Then, GPS. The phone is an HTC Desire S (android). Screen is a little small but I think it should be fine. Big Planet Tracks is free and let's you import or record tracks and either use online or offline maps. There's no need for maps though. I used Mobile Atlas creator to download most of Gauteng up to 200m zoom level so that there's no need to be online all the time.
