Offroad panniers

I'm looking to get some soft luggage for a upcoming off-road trip but I'm not sure where to start. Most of the commercial bike shops have your standard road tourer type gear and whether its dust and waterproof is questionable. Does anyone know of a good, affordable adventure pannier system that will fit a XT660???
