Panniers yes/no??

Ok i am new here and new to biking in general. Can someone please advise me? I ride a Harley sportster and will be doing my first long trip later this year but i need space to pack, now if I had a GS it wouldn't be a problem as you get panniers made of metal that can lock. I do not want to go on a trip with leather saddle bags and get stuff stolen from my bike half way on the trip. so what are the options? what can the wise WD tell me regarding this problem??
