Ok, I see I have a gap in my biking fleet

For my road/gravel long distance tours I have my ETV Caponord. VERY happy with it.
I want something that I can do the more technical off road stuff but still in a touring format. (Ie. multiday tour in the heavy stuff) Like a 650 or something that is light enough to handle the rough stuff but can still take the load, get to 140 on tar and less expensive when I lay down with it.
I would also like to use it on day rides down the valeys, like a 250 or something which is light and manuoverable.
Which bikes can I look at to fill this role?
