Which lower 500cc + Dual Purpose?

As above.
I'm still sort of thinking of replacing my 2 old bikes (98 1100 Gs and 83 XTZ 600) with one fresher, younger "do it all" bike.
Of all of my choices, the 1100/1150/1200 GS has a nice seat height, and also the DR 650. And the 660R
BUT .... I have other bikes that I'm eyeing too...
1) XR 650
2) XT 660 Z
.....can one "shave" a seat on either of these?
I'd like to keep suspension etc all original.
Both of these also feels very "afdraande" to me, like I'm sitting on top of the thing, and not "in" it.
Anyone has a similar kortgat problem with either of these bikes, and what was the solution?
