Anyone changed sprockets on 800GS for slower/more technical terrain??

My sprockets and chain is due for replacement, and we are planning a long slower trip, has anyone drop a tooth on the front sprocket (maybe to big of a difference?) or maybe 2-3 teeth bigger on the rear, think I should go that way, more friendly towards the clutch on technical terrain as well??

Any advice will be appreciated...
