If you feel comfortable sitting, then do it, but sometimes you have more directional control by standing with the bike "squirming/swinging" below your body weight. Your body remains relatively stable compared to the wheels sliding and bouncing. Always bend your arms and legs slightly when standing.... your body then absorbs rapid movements of the bike. Don't stand stiff/firm like a Meerkat!
