It's an issue that affects men all over the world, yet it is seldom discussed. I feel that now, more than ever, it's time to lift the veil of manly machoness and talk about..............recipes! :wink:
Coz let's face it fellas, we all go into the bush, we all camp out, and we all have to cook out there. I don't know about you guys, but sometimes I really struggle to come up with food ideas that are tasty, healthy, simple and above all easy and quick to prepare. I figured that I might have a go at starting a thread where we can share our simple recipe ideas, to make it a bit easier on all of us when planning a trip away, because having to worry about what to east is not something I enjoy. I'll get us started with a recipe for a beef sausage pasta, and a vegetable stir fry I often make. Just don't tell anyone I started this thread, I would hate for my big tough reputation to be ruined :lol:
Beef Sausage Pasta
Serves 2, adjust serving size accordingly
Ingredients:
3 beef sausages
2 handfuls of spiral pasta or penne pasta
1 can pulped tomatoes
2 clovs garlic
1 red onion
Herbs and spices of your choosing (I usually take salt, pepper, mixed herbs, oregana and basil)
Directions:
1 - Boil some water, cook the pasta, take it off the heat when al dente, set the pot aside and leave the pasta in the water;
2 - Cook the sausages through in your other pot, remove them from the heat, chop them into 1cm slices (I cut them diagonally for arty gourmet effect), set the chopped sausages aside;
3 - Chop the red onion into wedges, cook it in the sausage oil / fat until soft, add whole in of tomatoes, herbs and spices and finely chopped garlic. Add a bi of water if it's a bit thick;
4 - Bring this to a simmer. When the liquid has reduced a bit, add chopped sausages, the drained pasta, and stir the whole lot together.
5 - Serve and eat! I like this one because it can be eaten with only a fork and is very simple but hearty.
Vegetable noodle stir fry
Serves 2
Ingredients:
200g Hokkien noodles (you know the large, soft noodles that come sealed in a palstic packet for long storage life)
You can add whatever vegetables you want really, these are just the ones I sometimes use
1 brown onion, cut into wedges
1 cup brocolli
1 carrot cut into thin slices
1 small bok choy, roughly chopped
1 zuchinni, cut into thin slices
1 small can of whole baby corn
1 clove garlic
Herbs and spices (pretty much anything is good in this)
1/3 cup of soy sauce.
1 - Get all your stuff chopped up and ready to go before you start, as this one is really quick to cook. Prepare the noodles by heating up a pot of water and soaking them in warm water.
2 - Get your pot very hot, and add a little cooking oil, add onion and garlic and stir-fry until soft;
3 - Add carrot, zuchinni and brocolli and stir fry that until it begins to soften (usually about 3-5 minutes);
4 - Add baaby corn, bok choy and soy, rduce the heat and stir everything so it's all coated with the sauce.
5 - Let stir fry simmer until bok choy starts to wilt a little bit, drain noodles, stir them trhough until they are heated.
6 - Serve and enjoy. This is a really easy dish, made with veegtables and food that doesn't need to be refrigerated. You can add a couple of chopped red chillies if you want to give it a bit of zing.
Well chaps that's a couple I like to make that are easy, and require mercifully little preparation and cleaning! If you guys feel compelled to share some recipes, it will no doubt give all our next camping trips a bit of culinary variety!
