OK, another try. I'm reasonably sure that there are lots of tourists still in Hurghada and Sharm al Sheik. There is ferry between the two - not sure if it operates, but assuming the tourists are still there it might (timetable:

The ferry has a space for 12 cars. Maybe worth try to see if they would let you in. If so I would still check if they would let you ride - since you are already on Sinai from Sharm on Eilat in Israel - no point of being stuck in Sharm.
The option I have used, but have read since in Michnus report that it may not be available for bikes, is to take boat from Nuweiba in Sinai (again assuming you can sneak into Sharm) to Aquaba in Jordan, which is a stone throw from Israel. The problem Michnus mentioned that bikes are not allowed into Jordan anymore - hard to believe, but rather check first. But most probably if they will let you ride from Sharm to Nuweiba, they would probably let you go all the way to Eilat.
I have a sneaky feeling that if you can get to Sinai via the tourist back door, you might be able to make plan from there.
