The next evening, Brian was working late, his daughter stopped by to say hello and take a dip in the pool.

 
The first few days, I just relaxed and rested, getting used to the heat, Brian's pool was like bath water.  The next time we went out to dinner, he decided we'd go to Pappas BBQ in Dallas.  Over the years, I've tried numerous BBQ joints in the DFW area, I rate Pappas in the top 3 in my book.  Generous portions, though it can be inconsistent.  One time you can eat there and order beef and pork ribs and the meat will fall or peel easily off the bone.  Next time, tough as hell.  I suggest you order their 3 meat combo or the rib combo.  The place has a lot of character.

My din din, I ordered the 3 Meat Combo.  One can choose from several choices of fresh or cured meat, veggies, you name it, they have it and it all tastes homemade.

My choices - A giant beef rib, brisket, ham, and sausage, my sides, Cole slaw and candied yams.

 
Brian, my good friend from Texas, ordered the Rib Combo, which consisted of giant beef ribs, baby back pork ribs, and traditional pork ribs. 

His sides, creamed corn and collared greens.



 
Looks nice, but how do they keep all the meat tasty if there are not many people to finish a batch that comes out of the ovens ?
 
Next night, we went to J. Gilligans Pub for their world famous Irish Nachos.  Their Irish Nachos are so delicious, they've been featured on the Travel Channel.  Delicious and only around $8 if you don't add chicken or beef.  Cottage fries, doused with cheddar, jalapeños, onion, tomato, and bacon bits.  Umm, umm, umm, so so good.  Unfortunately, I lost the pic of what the plate looks like.  Here's a few pics of the place...

Kidding!!

We dined there May 29 between 8 and 9 pm, most dine between 5 and 7pm.

It was the day after Memorial Day, a national holiday, everyone is recuperating, not going out to eat.

So, they don't smoke much meat on those days.

Otherwise they have techniques they use to keep the meet moist and juicy on the inside, regardless of whether it's leftover.

Large veterinary syringes!
